A few weeks ago my family and I went to our local farmers market and we had a special treat: a watermelon shave ice atop vanilla ice cream. Now I wouldn't have ever thought that vanilla ice cream would be a lovely combination with watermelon, but it totally is!
That got me thinking about popsicles, and how a watermelon creamsicle might be delightful. So I decided to give it a try...and it was yummy...AND EASY!!!
Who is ready to make some creamsicles?
Ingredients:
- Watermelon
- Vanilla ice cream
Let's get started!
It's pretty simple. You'll just need watermelon juice. In order to get that, I took a few pieces of watermelon and used an immersion blender to grind it up a bit. Don't have a immersion blender? a regular blender would work well too.
Then I poured it through a strainer to get the juice and get rid of any chunks and seeds. To make 4 popsicles, I got about 3 cups of juice.
Then I added about 2.5 scoops of vanilla ice cream to the juice. You can add more or less, depending on how sweet you want it to be. I'll be honest that I might add a little more next time, but only because I LOVE vanilla ice cream.
The key here is to mix the vanilla ice cream with the juice, but don't let the ice cream dissolve completely. Some of the bits of ice cream will float on the top of the liquid, which is just what you want.
Pour the liquid into the popsicle molds. You'll notice that some of the ice cream will float to the top. Insert your sticks and go ahead and put it into the freezer just like this. The ice cream will stay towards the top, and when the popsicles are frozen this ice cream part will stay towards the bottom.
Let them freeze up, and enjoy!
